    Description: Lecture by T. Colin Campbell, PhD

    The lecture is part of a series that concerns the relationship between technological change and human life (how changes in food production and lifestyle have affected human nutrition) and the environment (the impact of how we eat on the world). This is the Vernon and Marguerite Gras Annual Lecture on "Interpretation, Nature and Value" that focuses on the intersection of the human and natural worlds under the general rubric of the human journey toward meaning. This series includes analyses of the borders between human systems of value and natural processes, of the impact of the natural world or of technological change on human culture or, conversely, of the impact of human culture on the natural world or the course of scientific research. This lecture series draws on traditions of literary and culture study, the series located within the English department is open to approaches from other fields (political science, sociology, history, for example) and, in its planning, draws on the strengths of allied disciplines in the Mason College of Humanities and Social Sciences.

      T. Colin Campbell, PhD will be giving the keynote address:
      Nutrition, when properly done, has an amazing but little known capacity to maintain health, repair health gone bad, and prevent future health problems—all with the same dietary protocol, better known as ‘dietary lifestyle’. In short, this kind of nutrition not only prevents future disease (domain of preventive medicine) but also treats existing disease while restoring health. When sustained, it is a protocol that is relatively free of side effects.
      This kind of nutrition is provided by a diet of whole plant-based foods with little or no added fat/oil, refined carbohydrates and salt (the taste enhancing ingredients of highly processed ‘fast foods’). Its nutritional composition approximates 80% carbohydrate, 10% fat and 10% protein. Although its biological activities within our bodies are infinitely complex, its application in the kitchen is surprisingly simple and user friendly. Its application also is far-reaching, including especially notable decreases in health care costs and environmental benefits.
