Black Bean Falafels with Avocado Salsa


Cook: 20 minutes
Yield: 10 falafels

This falafel recipe uses black beans instead of chickpeas. Topped with a fresh avocado salsa they are uniquely delicious!

Black Bean Falafels

  1. Add the oats, pepitas and spices to food processor and pulse until oats are broken down.
  2. Then add the black beans, tomato paste, lime juice and flour and blend until all ingredients are incorporated. You may need to scrape the sides during the blending process.
  3. Place parchment paper on cookie sheet.
  4. Remove mixture from food processor and roll into balls.
  5. Place falafel balls on parchment paper and cook for approximately 20 minutes at 350 degrees F.

Avocado Salsa

  1. Dice tomatoes and avocado.
  2. Finely dice red onion and add to tomatoes and avocado.
  3. Crush garlic and add to mixture.
  4. Chop fresh cilantro and add to mixture with lime juice.
