Brown Rice and Beans

This rice and beans recipe compliments any vegetable dish for a deliciously filling plant-based meal.

Preparation

  1. Water-sauté onions and garlic.
  2. Add rice and sauté for a few minutes.
  3. Add hot water. Bring to a boil.
  4. Reduce heat; cook partially covered, until water is dry.
  5. Serve with beans (see below) and vegetables.

Beans Preparation

  1. Soak beans overnight. Strain and wash soaked beans.
  2. Place beans and water in a large pot. Bring to a boil.
  3. Reduce heat. Cook, partially covered until soft.
  4. Water-sauté onions and garlic.
  5. Add a Tbsp of soft cooked beans to fry pan, and mash them to release starch.
  6. Add black pepper.
  7. Return mixture to beans pot.
  8. Let it cook for a few minutes.
  9. Serve over brown rice (see above).

In 2010 Nara adopted a plant-based lifestyle immediately after a Type 2 Diabetes diagnosis. She then completed the Culinary Skills Program in Durham College Oshawa, Ontario, Canada and her Plant-Based Nutrition Certificate from the T. Colin Campbell Center for Nutrition Studies. She shares her story about reversing diabetes, through adopting healthful eating habits and whole food plant-based recipes in her book Secrets of My Vegan Kitchen. She is the current leader of DurhamVeg, a Vegetarian Association in Ontario. She is currently producing a TV show in Portuguese promoting the benefits of a wfpb diet to Brazilians.
