Brown Rice and Beans

This rice and beans recipe compliments any vegetable dish for a deliciously filling plant-based meal.



  1. Sauté 1 onion and 1 garlic clove with a splash of water for 2-3 minutes.
  2. Add rice and sauté for a few minutes.
  3. Add 2 cups water. Bring to a boil.
  4. Reduce heat; cook partially covered, until rice is finished.
  5. Cover Beans with water in a bowl, and soak overnight. Strain and wash soaked beans.
  6. Place beans and 3 cups water in a large pot. Bring to a boil.
  7. Reduce heat. Cook, partially covered until soft.
  8. Sauté 1 onion and 1 clove garlic with a splash of water for 2-3 minutes.
  9. Add a Tbsp of soft cooked beans to fry pan, and mash them to release starch.
  10. Add black pepper and garlic powder.
  11. Return mixture to beans pot.
  12. Let it cook for a few minutes.
  13. Serve over the brown rice.

In 2010 Nara adopted a plant-based lifestyle immediately after a Type 2 Diabetes diagnosis. She then completed the Culinary Skills Program in Durham College Oshawa, Ontario, Canada and her Plant-Based Nutrition Certificate from the T. Colin Campbell Center for Nutrition Studies. She is the current leader of DurhamVeg, a Vegetarian Association in Ontario. She is currently producing a TV show in Portuguese promoting the benefits of a wfpb diet to Brazilians.
