Modules

Module 1: Hone Your Critical Thinking Skills

With Dr. T. Colin Campbell's guidance, you will hone your critical thinking skills and apply them to foundational concepts of scientific research, health, and nutrition. You will also learn from the perspectives of Dr. Thomas Campbell, who is a practicing physician, and Dr. Samara Sterling, a nutrition scientist, on the current medical model and its relationship with food and nutrition.

Module 2: Explore Dr. T. Colin Campbell's 8 Principles of Food and Health

Dr. Campbell has distilled his decades of research on health and nutrition—and the research of others—into eight key principles that you will explore throughout this program. In this module, Dr. Campbell will guide you through these principles, setting the stage for your journey into nutrition and society.

Module 3: Enhance Your Understanding of Nutrition

In this module, you will broadly consider the science of nutrition and examine the main nutrient classifications as well as the estimated and recommended daily allowances. You will then explore the answers to frequently asked questions regarding the nutrients available in a whole food, plant-based diet, such as the availability of various vitamins and minerals.

Module 4: Analyze Nutrition and the Gut Microbiome

The gut microbiota is an important microbial ecosystem within the body. In this module, you will analyze how diet and the environment affect the microbiota and how this can tie into overall health, as well as the most prevalent gastrointestinal conditions.

Module 5: Food Policy and Politics

Given the weight of evidence favoring healthier food choices, why don't we see this messaging more broadly communicated and adopted? In this module, you will investigate how food policy and politics can influence our food choices, as demonstrated by the United States government.

Modules

Module 6: Research Cancer Prevention and Treatment

In this module, you will examine the stages of cancer development, modern medicine’s emphasis on the chemical causes of cancer, and the effect of nutrition on cancer development. You will learn from experts about the treatment and prevention of cancer and begin exploring the China Project, often cited as the most comprehensive study of diet, lifestyle, and disease ever conducted.

Module 7: Investigate Heart Disease Prevention and Reversal

In this module, you will examine the pathology of heart disease, including coronary artery disease (CAD) and heart failure. You will analyze how heart disease forms and hear from the experts about their landmark research and recommendations on this topic. Additionally, you will examine current research on the topic of diet and heart disease, and explore different dietary recommendations.

Module 8: Examine the Prevention and Reversal of Diabetes

Diabetes is one of the leading causes of death and disability worldwide. Fortunately, our dietary choices have enormous power to prevent, manage, and even reverse diabetes. In this module, you will examine the pathology of diabetes and the research on nutrition’s role.

Module 9: Explore Neurological Conditions and Brain Health

Brain health is one of the most central aspects to quality of life. In this module, you will explore the research on Alzheimer's and other forms of dementia, as well as stroke and a variety of neurological conditions. You will examine key mechanisms of degenerative or vascular diseases of aging and lifestyle strategies to prevent them.

Module 10: Consider Approaches to Autoimmune Disease

An autoimmune disease develops when the body's immune system fails to recognize normal body tissues, attacking and destroying them as if they were foreign. In this module, you will explore the pathology of a range of autoimmune conditions. You will then review the compelling decade of case studies on autoimmune disease reversal through dietary and lifestyle interventions.

Modules

Module 11: Plant-Based Throughout the Lifespan

Are children raised on a plant-based diet nutrient deficient? Do pregnant women require supplementation? Will it be difficult for a family to adopt this lifestyle? Will plant-based nutrition be sufficient to support healthy aging? These are some of the common questions and concerns that you will address in this module.

Module 12: Plant-Based Nutrition and Fitness

Becoming a better athlete isn't just about your workout routine; nutrition also plays a crucial role. In this module, you will learn how a whole food, plant-based lifestyle supports athletic performance and function.

Module 13: Food Choices, Health, and the Environment

Modern food production poses an existential threat to the environment. It is neither a sustainable way to feed our growing global population nor a path to long-term survival for our species. In this module, you will explore research on the ideal dietary lifestyle for a healthier environment.

Module 14: Implementing Behavior Change

Understanding the benefits of a plant-based lifestyle is a critical first step to changing your behavior. But how do you ensure that your lifestyle changes are sustainable long term? In this module, you will apply advice and strategies from a variety of experts to your own life.

Module 15: Sparking Change in Others

You have now explored a wealth of evidence indicating that a whole food, plant-based lifestyle is beneficial for individual, community, society, and ecological health and wellness. In this module, our experts highlight the strategies that have worked for them in sharing this message with others, including reluctant or stubborn family members.

After earning your certificate, you will be able to

  1. Critically analyze the basic design and methodology of nutrition research to identify the strengths and weaknesses of the evidence provided
  2. Describe the nutrition profile of the whole food, plant-based lifestyle and apply Dr. Campbell’s 8 Principles of Food and Health
