Alexandria Huber-Disla is an Online Course Instructor for the T. Colin Campbell Center for Nutrition Studies in the Plant-Based Nutrition Certificate. She completed her undergraduate degree in Environmental Science and Public Policy and her Masters in Public Policy with a focus on food policy at the University of North Carolina at Chapel Hill. She has worked at the intersection of community building, environmental stewardship, and food education through her previous roles within local government and nonprofits. She currently lives in Durham, North Carolina, with her husband and daughter. Nelson Huber-Disla is the managing editor for the T. Colin Campbell Center for Nutrition Studies. He is a graduate of the University of North Carolina at Chapel Hill, where he studied English.
