Our children are growing up in a world very different from the world that most adults experienced in their youth. In terms of food and nutrition, these differences are profound and have had and are continuing to have a major impact on our health and the health of the planet. It is important to recognize the implications of these changes from a public health, environmental, and educational perspective.
Antonia Demas, PhD is the founder of the Food Studies Institute, a nonprofit organization. Dr. Demas has taught food studies in a variety of educational settings to people of diverse ages, ethnicities, and economic backgrounds all of her life. Dedicated to the improvement of the long-term health and education of children and their families, Dr. Demas has received national recognition for her research in food studies and for her food education curriculum, Food is Elementary©.
