Carmen Guerrero is a native Mayan-Aztec resident of Pennsylvania. In 2019, she adopted a plant-based diet which completely transformed her life. She began to raise awareness in her community about going back to ancestral roots both in the cultivation and preservation of food. She works as a community organizer, human rights and environmental activist. Carmen is a graduate of the Center for Nutrition Studies and eCornell Plant-Based Nutrition Certificate program, and she believes that taking the course was an essential tool in her fight for justice. Carmen is co-founder of the Fortaleza Latina Pennsylvania Coalition; in coordination with Dr. Ana Negrón,they offer a virtual plant-based nutrition workshop to the community every Wednesday from 5:00–6:00 pm (zoom ID 879-7001-2349 “plantas” password). Carmen has three daughters and three grandchildren.
