Ingredients

Waffles

  • 1 ½ cup unsweetened plant-based milk
  • ¼ cup applesauce
  • 1 tsp apple cider vinegar
  • ½ cup rolled oats
  • ¾ cup chickpea flour
  • ¼ cup almond flour
  • ½ cup rice flour
  • 1 ½ tsp baking powder
  • ¼ tsp baking soda
  • ⅛ tsp sea salt
  • ½ + ⅛ tsp ground cinnamon, divided
  • 1 tsp vanilla extract
  • ¼ cup date paste or maple syrup

Fruit Sauce

  • 2 cups frozen fruit (mango, peach, strawberry, blueberry, etc.)
  • 1 cup freshly pressed apple juice (or ¼ cup water + ¼ cup date paste)
  • ⅛ tsp sea salt
  • 1 Tbsp kuzu
  • ⅛ cup cold water

Instructions

Waffles

  • 1. Combine all ingredients in a blender.
  • 2. Pour the mixture into a waffle iron and cook.
  • 3. Serve with fresh fruit or fruit sauce.

Fruit Sauce

  • 1. In a small saucepan, combine the fruits, apple juice, and sea salt. Bring to a boil.
  • 2. In a separate container, mix the kuzu and cold water. Set aside.
  • 3. Once the fruit and juice mixture comes to a boil, gradually add the dissolved kuzu while stirring with a whisk. Continue stirring until the sauce thickens.
  • 4. Serve over waffles, pancakes, or oatmeal.

Cooking Tips

  • 1. You can substitute the kuzu with cornstarch or arrowroot.
