Ingredients

  • 1 large purple carrot, grated (about one cup)
  • 2 medium tomatoes, diced (about one cup)
  • 1 large yellow apple, peeled and diced
  • 2 Tbsp lemon juice
  • 1 large handful of fresh cilantro, chopped
  • 1 green jalapeño pepper, minced
  • 1 tsp grated ginger
  • 3 Tbsp hemp seed

Instructions

  • 1. Toss all ingredients together until flavors have blended.
