Ingredients

  • 3 frozen bananas, sliced
  • 1 large or 2 medium pitaya (dragon fruit)
  • ½ block of silken tofu
  • 1 teaspoon vanilla extract

Suggested Toppings

  • Mango, sliced
  • Strawberries, sliced
  • Homemade granola
  • Goji berries
  • Sunflower seeds
  • Almond butter or Vegan Caramel Sauce

Instructions

  • 1. In a blender, process ingredients until smooth.
  • 2. Place in a bowl and add the toppings of your choice.

Cooking Tips

  • 1. You can substitute the fresh pitaya with two 3.5 oz (100 g) packets of unsweetened frozen pitaya puree.
  • 2. If needed, you can add a little water to adjust the consistency.
