Chef’s note: People use the phrase “as American as apple pie” fondly. Unfortunately, most commercial apple pies are full of ingredients like butter, oil, eggs, and white flour that lead to diseases like obesity and heart disease that are now as American as apple pie. That’s why you’re much better off eating the Apple Pie That Won’t Make You Die!

Ingredients

Crust

  • 2 cups gluten-free rolled oats
  • 1 Tbsp cinnamon
  • 1 tsp vanilla bean powder
  • 12 ounces pitted dates (about 2 cups)

Filling

  • 2 pounds sweet apples, cored and chopped (6 cups) (see tips)
  • 1 cup golden raisins
  • ¾ cup Chef AJ’s Date Paste
  • 2 Tbsp cinnamon
  • 1 tsp vanilla bean powder

Topping

  • ¼ cup unsweetened, reduced-fat shredded coconut, optional
  • 1 large sweet apple, cored and cut into 16 slices
  • 2 Tbsp date syrup

Instructions

Crust

  • 1. Place oats, cinnamon, and vanilla bean powder in a dry food processor fitted with the “S” blade and process into a flour-like consistency.
  • 2. Add the dates and process again until the dough sticks together and a ball starts to form. Depending on how strong your food processor is, this could take several minutes.
  • 3. Press the batter into a 10-inch glass pie pan.

Filling

  • 1. Preheat oven to 325°F.
  • 2. Place the chopped apples in a large bowl, add the raisins, Chef AJ’s date paste, and spices, and mix well.
  • 3. Pour evenly over the crust.

Assembly

  • 1. Sprinkle the coconut on top of the pie, if using.
  • 2. Take the 16 apple slices and place them around the outside edge of the pie filling in a fan-like pattern.
  • 3. Brush date syrup over the apple slices and bake for 45 minutes. Let cool in the oven.

Cooking Tips

  • 1. Envy or Gala apples work best for this recipe.
  • 2. You can buy an inexpensive apple corer and slicer that makes 16 perfect slices.
  • 3. Serve warm or cold with Chef AJ’s Apple Pie Nice Cream or Banana Nice Cream, or cold with Low-Fat Pear Whip.
