Ingredients

  • 4 large potatoes
  • 5 fresh rosemary sprigs
  • 1 cup fresh basil leaves
  • ½ cup onion
  • 8 garlic cloves
  • 1 tsp low sodium soy sauce or tamari
  • Pepper to taste

Instructions

  • 1. Preheat oven to 350° degrees F. Line a baking sheet with parchment paper.
  • 2. Dice the potatoes into small pieces and place them in a large bowl.
  • 3. Add tamari to the potatoes.
  • 4. Strip the rosemary leaves starting at the top of the stalk.
  • 5. In a food processor, combine the rosemary, basil, onion, and garlic. Pour over potatoes and toss well to coat.
  • 6. Place the potatoes on the baking sheet.
  • 7. Bake for 45 minutes or until crisp.
  • 8. Sprinkle with pepper and serve.

Cooking Tips

  • 1. High starch potatoes like russets are great for home fries because they're denser and have the least amount of moisture in them.
