Baked Rosemary and Basil Home Fries
What You'll Need
4 large potatoes
5 fresh rosemary sprigs
1 cup fresh basil leaves
½ cup onion
8 garlic cloves
1 tsp low sodium soy sauce or tamari
Pepper to taste
How to Make It
1 Preheat oven to 350° degrees F. Line a baking sheet with parchment paper.
2 Dice the potatoes into small pieces and place them in a large bowl.
3 Add tamari to the potatoes.
4 Strip the rosemary leaves starting at the top of the stalk.
5 In a food processor, combine the rosemary, basil, onion, and garlic. Pour over potatoes and toss well to coat.
6 Place the potatoes on the baking sheet.
7 Bake for 45 minutes or until crisp.
8 Sprinkle with pepper and serve.
High starch potatoes like russets are great for home fries because they're denser and have the least amount of moisture in them.
