Creamy Cauliflower Soup
What You'll Need
½ cup onion, minced
4 cups cauliflower, chopped into florets
2 cups of vegetable broth
5 cups of water
4 garlic cloves, crushed
1 ½ tsp of sea salt
3 Tbsp nutritional yeast (optional)
¼ cup chives or cilantro, chopped (optional)
Roasted corn kernels, for serving
How to Make It
1 In a medium pot, sauté the onion in 1 Tbsp of vegetable broth over medium heat for 5 minutes or until slightly translucent.
2 Add the rest of the ingredients, bring to a boil, and cook for 8-10 minutes or until the cauliflower is soft.
3 Using an immersion blender or a regular blender, process until smooth.
4 Serve with chives or cilantro and roasted corn.
