Ingredients

  • ½ cup onion, minced
  • 4 cups cauliflower, chopped into florets
  • 2 cups of vegetable broth
  • 5 cups of water
  • 4 garlic cloves, crushed
  • 1 ½ tsp of sea salt
  • 3 Tbsp nutritional yeast (optional)
  • ¼ cup chives or cilantro, chopped (optional)
  • Roasted corn kernels, for serving

Instructions

  • 1. In a medium pot, sauté the onion in 1 Tbsp of vegetable broth over medium heat for 5 minutes or until slightly translucent.
  • 2. Add the rest of the ingredients, bring to a boil, and cook for 8-10 minutes or until the cauliflower is soft.
  • 3. Using an immersion blender or a regular blender, process until smooth.
  • 4. Serve with chives or cilantro and roasted corn.
