Kathleen Kirby

Kathleen has been a registered nurse for 31 years. She currently works in nursing education. Kathleen has been following a whole food, plant-based (WFPB) diet for the last 5 years. She credits her openness to a plant-based diet to her aeronautical engineer father. She explains, “As a rocket scientist in the 60’s, my dad was one who believed in the importance of evidence. And that is precisely why he was open to the findings presented by one our earliest pioneers in the field, Dr. Dean Ornish.” Kathleen is a T. Colin Campbell Center for Nutrition Studies and eCornell Plant-Based Nutrition Certificate Graduate.
