Author’s Notes: Chef AJ was the first chef to serve me dessert made out of beans with her black bean brownie recipe. They are delicious, and no one I serve them to says they taste like beans. They inspired this recipe, a healthier version of one my mom made once.

Ingredients

  • 1 ½ cups cannellini beans rinsed and drained
  • ½ -¾ cup maple syrup or date paste
  • 3 Tbsp almond or peanut butter
  • 2 Tbsp ground flax seeds soaked in 3 Tbsp water for 15 minutes
  • 1 tsp vanilla extract
  • ½ cup whole wheat pastry flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • ¾ cup vegan chocolate chips (optional)

Instructions

  • 1. Preheat the oven to 350 degrees F.
  • 2. Place the cannellini beans, maple syrup, and almond butter in the bowl of a food processor and puree until smooth and creamy. Add the bean mixture to a mixing bowl with the flax mixture and vanilla extract, and fold the mixture together.
  • 3. Combine the flour, baking powder, and sea salt, in a small bowl and mix well. Add the flour mixture to the bowl with the bean mixture, and chocolate chips, and fold the dry ingredients into the wet.
  • 4. Line an 8-inch square baking pan with parchment paper.
  • 5. Spoon the batter into the prepared pan, and gently press the batter into the pan. Bake for 35 to 40 minutes, or until a toothpick inserted in the center of the pan comes out clean. Let stand at least 20 minutes before cutting into squares.
