This fun, festive breakfast is the perfect idea to serve someone special to celebrate St. Patrick's Day. Double, triple, or quadruple the recipe for a crowd.
1. Take a ¼-inch-thick slice from a green bell pepper (cut horizontally). The resulting slice should look like a shamrock shape. Remove seeds and pith (white part) as needed. This will be your mold.
2. Cut an avocado in half, deseed it, and scoop out the flesh into a bowl. Add some lemon juice and season with salt and fresh garlic to taste. Mash until smooth.
3. Take a slice of toasted bread and place the bell pepper slice on it. Fill the sliced pepper with the seasoned mashed avocado, creating a smooth and flat shamrock shape.
4. Using a sheet of paper to create sharp edges, sprinkle the crushed pistachios on the shamrock in a cross to simulate leaves of a shamrock.
