Ingredients

  • 1 green bell pepper
  • ½ ripe avocado
  • 1-2 Tbsp lemon juice
  • Salt, to taste
  • 1 garlic clove, crushed
  • 1 slice of whole grain bread
  • 1-2 Tbsp pistachios, crushed

Instructions

  • 1. Take a ¼-inch-thick slice from a green bell pepper (cut horizontally). The resulting slice should look like a shamrock shape. Remove seeds and pith (white part) as needed. This will be your mold.
  • 2. Cut an avocado in half, deseed it, and scoop out the flesh into a bowl. Add some lemon juice and season with salt and fresh garlic to taste. Mash until smooth.
  • 3. Take a slice of toasted bread and place the bell pepper slice on it. Fill the sliced pepper with the seasoned mashed avocado, creating a smooth and flat shamrock shape.
  • 4. Using a sheet of paper to create sharp edges, sprinkle the crushed pistachios on the shamrock in a cross to simulate leaves of a shamrock.
  • 5. Cut off a small piece of the green bell pepper and add it to the bread to create a stem. (See videos for artistic details.)

Cooking Tips

  • 1. Make sure to choose a green pepper that is indented on the sides so it will look like a shamrock shape when sliced.
