  • 2 large fresh mangos, diced small and divided, plus more for serving
  • 1 ¾ cups unsweetened plant-based milk
  • 1 tsp lime juice (optional)
  • 2 Tbsp maple syrup or date paste
  • ½ cup chia seeds


  • 1. In a blender, combine one of the mangos with the plant-based milk, lime juice (if using), and maple syrup or date paste. Puree until smooth.
  • 2. Transfer the mixture to a medium bowl and add the second diced mango and chia seeds. Stir to combine.
  • 3. Refrigerate for 30 minutes. Stir one more time.
  • 4. Refrigerate for at least one more hour before serving. Serve with mango chunks on top.
