Very Berry Chia Compote
What You'll Need
4 cups fresh or frozen berries
¼ cup orange juice
2 Tbsp chia seeds
1 tsp pure vanilla extract
How to Make It
1 In a medium saucepan, combine berries and orange juice and heat over medium-high heat.
2 When the mixture begins to bubble, reduce heat to medium-low and to cook for 10-15 minutes, occasionally mashing the berries and stirring to combine.
3 Turn off the heat and add the chia seeds and vanilla extract. Allow the mixture to thicken and cool for 10-15 minutes.
Serve over your favorite pancakes, waffles, oats, plant-based yogurt, or frozen banana nice cream.
