This light, creamy mousse is naturally sweet and uses only 6 ingredients. It’s the perfect summer dessert!

Ingredients

1 12.3 oz package of organic firm silken tofu
1 cup frozen strawberries
1 tsp vanilla extract
4 Medjool dates
1 Tbsp strawberry preserves (fruit sweetened)
2 Tbsp freshly squeezed lemon juice

Instructions

1. In a blender, process all the ingredients until smooth.
2. Place mixture into a freezer-safe dish and allow to set for 45 minutes.
3. Scoop and serve. Store any leftovers in the refrigerator.
