What You'll Need
1 12.3 oz package of organic firm silken tofu
1 cup frozen strawberries
1 tsp vanilla extract
4 Medjool dates
1 Tbsp strawberry preserves (fruit sweetened)
2 Tbsp freshly squeezed lemon juice
How to Make It
1 In a blender, process all the ingredients until smooth.
2 Place mixture into a freezer-safe dish and allow to set for 45 minutes.
3 Scoop and serve. Store any leftovers in the refrigerator.
