Ingredients

  • 2 cups kale, spinach, or lettuce
  • 1 celery rib, sliced
  • 1 tomato, diced
  • 1 small cucumber, diced
  • 2 baby bell peppers, diced
  • 6 olives, pitted and sliced
  • ½ cup chickpeas, cooked and drained
  • Sunflower, sesame, pumpkin, or peanut seeds

Dressing

  • 1 avocado, pitted and peeled
  • Juice of ½ lime
  • 1 garlic clove
  • 1 medium bunch cilantro
  • 1 serrano pepper, seeded
  • ⅓ cup water
  • Salt and pepper, to taste

Instructions

Dressing

  • 1. Place all the ingredients in a blender and process until you achieve the desired texture, adding more water if needed.

Salad

  • 1. Place the leafy greens, celery, tomato, cucumber, and bell pepper in a large bowl. Mix everything well.
  • 2. Add the olives and chickpeas and sprinkle your choice of seeds.
  • 3. Add the dressing and enjoy.
