Ingredients

  • 1 cup raw, unsalted cashews
  • ¾ cup water
  • 1 bunch parsley
  • 2 Tbsp apple cider vinegar
  • Juice of 1 ½ limes
  • 4 garlic cloves
  • ½ tsp sea salt, or to taste

Instructions

  • 1. Soak the cashews in hot water for 30 minutes. Drain.
  • 2. Process all ingredients in a blender or food processor.

Cooking Tips

  • 1. Spread over roasted vegetables, tofu, mushrooms, or toast.
  • 2. Use as a spread in your favorite sandwich or wrap.
