What You'll Need
1 cup raw, unsalted cashews
¾ cup water
1 bunch parsley
2 Tbsp apple cider vinegar
Juice of 1 ½ limes
4 garlic cloves
½ tsp sea salt, or to taste
How to Make It
1 Soak the cashews in hot water for 30 minutes. Drain.
2 Process all ingredients in a blender or food processor.
Spread over roasted vegetables, tofu, mushrooms, or toast.
Use as a spread in your favorite sandwich or wrap.
