Ingredients

  • 2 Tbsp apple cider vinegar
  • 1½ tsp maple syrup
  • ¼ tsp celery seed
  • ¼ tsp salt
  • 1 small carrot, thinly shaved
  • 2 cups thinly shaved red cabbage
  • ¼ cup thinly shaved red onion
  • ¼ cup chickpeas, rinsed
  • 1 Tbsp chopped parsley
  • Ground black pepper to taste

Instructions

  • 1. In a medium bowl, stir together the vinegar, maple syrup, celery seed, salt, and pepper. Add the remaining ingredients and toss until evenly mixed. Serve immediately
