This simple sweet potato dish comes together in minutes and is a guaranteed crowd pleaser.

Prep: 5 mins Cook: 30 mins Yield: 4-6 servings

Ingredients

4 cups diced garnet sweet potatoes
1 cup cubed mango
1 cup diced pineapple
½ tsp salt-free garlic & herb seasoning
½ cup pineapple coconut juice

Instructions

1. Preheat oven to 350 degrees F.
2. Combine all the ingredients in an 8 x 11 inch (2 qt) baking pan.
3. Bake covered for 25 minutes.
4. Bake uncovered for 5 minutes and serve.
