Ingredients

  • 1 clove garlic, minced
  • 1 tsp grated ginger (optional)
  • 1 cup mixed veggies (peas, carrots, bell peppers, etc.)
  • 1 medium head cauliflower, grated into “cauliflower rice” (or 4 cups pre-riced cauliflower)
  • 1 Tbsp low-sodium soy sauce or tamari (for a soy-free option, use soy-free tamari or coconut aminos)
  • Green onions or sesame seeds for garnish

Instructions

  • 1. Heat a large skillet over medium heat.
  • 2. Sauté the garlic (and ginger if using) for 1–2 minutes until fragrant.
  • 3. Add the mixed veggies to the pan and cook for 3–5 minutes, stirring occasionally, until they start to soften.
  • 4. Add the cauliflower rice to the skillet and stir well. Cook for 5–7 minutes, allowing the cauliflower to heat through and lightly soften.
  • 5. Stir in the soy sauce or tamari, ensuring everything is well coated.
  • 6. Take the dish off the heat and, if you like, garnish it with green onions or sesame seeds.

Cooking Tips

  • 1. This dish is easily customizable. Add tofu, tempeh, or chickpeas to transform it into a wholesome, satisfying meal.
  • 2. Want some spice? A pinch of chili flakes or a drizzle of sriracha adds a tasty kick! For an extra crunch, toss in some chopped nuts or seeds (e.g., cashews, almonds, or sunflower seeds) just before serving.
