Ingredients

  • 1 pound whole grain noodles, cooked al dente
  • 2 cups Alfredo sauce
  • Lightly steamed vegetables of your choice (broccoli, carrots, cauliflower, kale)
  • Sweet peas
  • Seasonal lettuce
  • Microgreens (optional)

The Best Alfredo Sauce

  • 1 cup raw cashews
  • 3 cups boiling water
  • 2 tsp fresh lemon juice
  • 2 garlic cloves
  • 4 Tbsp nutritional yeast
  • 1 tsp sea salt or to taste
  • Black pepper to taste

Instructions

  • 1. Process cashews in a blender until ground (about 1 minute).
  • 2. Carefully add the boiling water, and blend for two minutes.
  • 3. Add the remaining sauce ingredients and blend until well mixed.
  • 4. Place the Alfredo sauce in a saucepan and simmer for 5 minutes.
  • 5. Combine the finished sauce with the pasta. Serve with greens and veggies.

Cooking Tips

  • 1. To make a nut-free version of this sauce, substitute the cashews with two cups of lightly roasted or steamed cauliflower.
