
Pasta Alfredo Bowl


What You'll Need
1 pound whole grain noodles, cooked al dente
2 cups Alfredo sauce
Lightly steamed vegetables of your choice (broccoli, carrots, cauliflower, kale)
Sweet peas
Seasonal lettuce
Microgreens (optional)
THE BEST ALFREDO SAUCE
1 cup raw cashews
3 cups boiling water
2 tsp fresh lemon juice
2 garlic cloves
4 Tbsp nutritional yeast
Salt and pepper to taste

How to Make It
1 Process cashews in a blender until ground (about 1 minute).
2 Carefully add the boiling water, and blend for two minutes.
3 Add the remaining sauce ingredients and blend until well mixed.
4 Place the Alfredo sauce in a saucepan and simmer for 5 minutes.
5 Combine the finished sauce with the pasta. Serve with greens and veggies.

Cooking Tips
To make a nut-free version of this sauce, substitute the cashews with two cups of lightly roasted or steamed cauliflower.
