
Strawberry Chopped Salad

I recommend using garbanzo beans (I love them in everything!), but feel free to use whatever bean you have on hand. Also, I find that it’s best to keep the dressing simple so that the fresh flavors of the other ingredients can shine through.

What You'll Need
2 pints strawberries, washed, de-stemmed, and halved
3 cups (2 15-ounce cans) cooked garbanzo beans, rinsed and drained
2 cucumbers, peeled, seeded, and chopped
1 red onion, diced
1/2 cup basil, chopped
2 T minced fresh mint
Juice of 2 lemons and the zest of 1, or to taste
Sea salt to taste
Black pepper to taste

How to Make It
1 Combine the strawberries, garbanzo beans, cucumbers, red onion, basil, mint, and lemon juice and zest in a bowl.
2 Season with sea salt and black pepper to taste. Chill for 1 hour before serving to let the flavors bloom.
