T. Colin Campbell Center for Nutrition Studies

Ingredients

  • 6 Medjool dates, pitted
  • 1 (12-ounce) bag cranberries, rinsed and drained
  • 1 cup frozen dark sweet cherries
  • 1 Tbsp orange zest
  • 1 cinnamon stick
  • ¼ tsp ground ginger
  • ¼ tsp nutmeg
  • ¼ tsp allspice
  • 1 cup orange juice

Instructions

  • 1. Soak the dates in hot water until softened, about 1 hour.
  • 2. In a large saucepan over medium heat, add the cranberries, dark cherries, orange zest, and spices.
  • 3. Drain the soaked dates and add to a blender with orange juice. Process until smooth, and pour blend into the saucepan.
  • 4. Adjust the heat to medium-high until the cranberries begin to pop, then reduce to a slow simmer for 10 minutes, stirring occasionally.
  • 5. Remove from heat and allow to cool. The sauce will thicken as it cools.
  • 6. Adjust seasoning to taste. For a sweeter sauce, add a few more cherries or blend another date.
