I first had a peanutty dish similar to this when my sons treated me to dinner at an African restaurant. What makes this recipe so good is that I serve it on top of Plátanos Maduros.
1. In a medium saucepan, saute onions, garlic, and red pepper flakes (if using) in 2 Tbsp of vegetable broth over medium-high heat for 3-5 minutes, until onions brown.
2. Add remaining 2 Tbsp of vegetable broth, collard greens, tomatoes. Cover and cook over medium heat for 3-5 minutes.
3. Add peanut butter mixture and lemon juice. Cook for 2-3 minutes.
