Ingredients

  • ½ cup diced onions
  • 4 garlic cloves, minced
  • ⅛ tsp red pepper flakes (optional)
  • 4 Tbsp vegetable broth, divided
  • 4 cups chopped collard greens
  • 2 tomatoes, diced
  • 2 Tbsp natural peanut butter mixed with 1/4 cup vegetable broth
  • ½ tsp lemon juice
  • Salt, to taste
  • ½ cup crushed peanuts
  • Plátanos Maduros.

Instructions

  • 1. In a medium saucepan, saute onions, garlic, and red pepper flakes (if using) in 2 Tbsp of vegetable broth over medium-high heat for 3-5 minutes, until onions brown.
  • 2. Add remaining 2 Tbsp of vegetable broth, collard greens, tomatoes. Cover and cook over medium heat for 3-5 minutes.
  • 3. Add peanut butter mixture and lemon juice. Cook for 2-3 minutes.
  • 4. Season with salt and add crushed peanuts.
  • 5. Serve peanut collards on top of Plátanos Maduros.
