
Peanut Collard Greens


What You'll Need
½ cup diced onions
4 garlic cloves, minced
⅛ tsp red pepper flakes (optional)
4 Tbsp vegetable broth, divided
4 cups chopped collard greens
2 tomatoes, diced
2 Tbsp natural peanut butter mixed with 1/4 cup vegetable broth
½ tsp lemon juice
Salt, to taste
½ cup crushed peanuts

How to Make It
1 In a medium saucepan, saute onions, garlic, and red pepper flakes (if using) in 2 Tbsp of vegetable broth over medium-high heat for 3-5 minutes, until onions brown.
2 Add remaining 2 Tbsp of vegetable broth, collard greens, tomatoes. Cover and cook over medium heat for 3-5 minutes.
3 Add peanut butter mixture and lemon juice. Cook for 2-3 minutes.
4 Season with salt and add crushed peanuts.
5 Serve peanut collards on top of Plátanos Maduros.
