Ingredients

  • 1 ½ cup cooked chickpeas, drained
  • ¼ tsp of black pepper
  • ½ tsp of cumin
  • ½ tsp of curry powder
  • ¼ tsp of cayenne pepper
  • ¼ tsp of chilli powder or paprika
  • 2 Tbsp reduced-sodium soy sauce
  • 1 tsp of garlic, minced
  • 1 heaping Tbsp of nutritional yeast
  • ½ Tbsp of salt-free poultry seasoning
  • ¼ tsp of onion powder
  • ¼ cup of ground golden flax seed

Instructions

  • 1. Preheat oven to 375 degrees F.
  • 2. Add all the ingredients to a food processor (or use a potato masher) and process (or mash) until mixed. You should get a crumbly consistency with everything combined.
  • 3. Line a baking sheet with parchment paper.
  • 4. Shape the mixture into tenders or nuggets.
  • 5. Bake until extra crispy for 20-22 minutes, flipping gently halfway through.
  • 6. Let them cool a bit before serving.

Cooking Tips

  • 1. They go great with ketchup, barbeque sauce, and many other favorite condiments.
  • 2. Increase the cayenne pepper to ½ tsp if you like it really spicy, warning they'll be hot!
  • 3. You can make a large batch of these fingers ahead of time and freeze them.
