Black Bean Falafel & Avocado Salsa Recipe

What You'll Need


BLACK BEAN FALAFELS INGREDIENTS

2 cups black beans, rinsed and drained

½ cup oats

½ cup pepitas (pumpkin seeds)

1 tsp ground cumin

1 tsp ground coriander

1 tsp garlic powder

2 tsp oregano flakes

1 tsp chili powder

2Tbsp tomato paste

1 Tbsp whole wheat flour

Juice of 1 lime

AVOCADO SALSA INGREDIENTS

1 large avocado

2 tomatoes

¼ red onion

1 small garlic clove

Juice of ½ lime

½ cup fresh cilantro


How to Make It


BLACK BEAN FALAFELS PREPARATION

1 Add the oats, pepitas and spices to food processor and pulse until oats are broken down.

2 Then add the black beans, tomato paste, lime juice and flour and blend until all ingredients are incorporated. You may need to scrape the sides during the blending process.

3 Place parchment paper on cookie sheet.

4 Remove mixture from food processor and roll into balls.

5 Place falafel balls on parchment paper and cook for approximately 20 minutes at 350 degrees F.

AVOCADO SALSA PREPARATION

1 Dice tomatoes and avocado.

2 Finely dice red onion and add to tomatoes and avocado.

3 Crush garlic and add to mixture.

4 Chop fresh cilantro and add to mixture with lime juice.
