Sprouted Lentils and Whole Rice Stew

Ingredients

  • 1 cup black or green lentils
  • 1 cup brown rice
  • 3 Tbsp tomato paste
  • 1 red pepper
  • 1 tsp salt
  • A handful fresh dill
  • 4-5 cups vegetable broth

Instructions

  • 1. Soak lentils and rice together overnight in a pot with fresh, cold water. Drain and rinse before use.
  • 2. Chop the red pepper.
  • 3. Add all ingredients to a pot except the fresh dill. Heat until boiling. Turn down heat and simmer for about 30 – 40 minutes until the lentils are finished.
  • 4. Chop the fresh dill and add, stirring in gently.
