
Lentil and Rice Stew


What You'll Need
1 cup black or green lentils
1 cup brown rice
3 Tbsp tomato paste
1 red pepper
1 tsp salt
A handful fresh dill
4-5 cups vegetable broth

How to Make It
1 Soak lentils and rice together overnight in a pot with fresh, cold water. Drain and rinse before use.
2 Chop the red pepper.
3 Add all ingredients to a pot except the fresh dill. Heat until boiling. Turn down heat and simmer for about 30 – 40 minutes until the lentils are finished.
4 Chop the fresh dill and add, stirring in gently.
