  • 1 green jalapeño
  • 1 medium apple
  • 1 medium carrot
  • Juice of half an orange (about 3 Tbsp)
  • 3 sweet peppers or one large bell pepper
  • Pinch of pink salt or to taste
  • 1 handful of fresh basil leaves, chopped
  • 1 large, firm avocado, cubed
  • 3 Tbsp hemp seed
  • 5-8 cups mâche lettuce
  • 1 handful of microgreens of your choosing


  • 1. Using a protective glove, slice all peppers, apple, and carrot on mandolin slicer or julienne them by hand. Place in bowl. Add orange juice, salt, avocado, hemp seed, and chopped basil. Toss, taste, and adjust salt if needed. Prepare plates of mâche lettuce & microgreens then gently top with apple salad mixture.
