Ingredients

  • 4 cups baby spinach
  • 4 cups baby kale
  • ½ cup fresh mint, chopped
  • 2 cups cooked quinoa
  • ¼ cup green onion, diced
  • 2 cups pomegranate seeds
  • 2 oranges, peeled and sliced
  • 2 Tbsp chopped walnuts
  • 2 Tbsp lime zest

Dressing

  • ¼ cup white balsamic vinegar
  • ¼ cup freshly squeezed orange juice
  • 3 Tbsp freshly squeezed lime juice
  • 1 Tbsp date paste
  • Zest of one lime

Instructions

  • 1. In a large bowl, stir in spinach, kale, mint, quinoa, lime zest, and green onion. Top with pomegranates, orange slices, and walnuts.
  • 2. To make the dressing, whisk all ingredients together well in a small bowl.
  • 3. Drizzle the dressing over salad, and serve immediately.
