Ingredients

  • 1 large carrot, peeled and chopped
  • ½ cup diced, sweet onion
  • 1 inch knob of ginger, peeled and rough chopped
  • 2 Tbsp diced celery
  • 3 medjool dates, pitted
  • 1 Tbsp tahini
  • 1 Tbsp mellow white miso (optional)
  • 1 Tbsp rice vinegar
  • ½ cup water

Instructions

  • 1. Blend all ingredients in a high powered blender until smooth. Alternatively, you can use a food processor. Pulse the ingredients, scraping down the sides as needed until smooth.
