Ingredients

  • 1 (12 oz) package extra-firm silken tofu, or 1 (15 oz) can white beans, rinsed and drained, or 1 1/2 cups cooked white beans (see Tip)
  • 4 dates, pitted
  • 1 garlic clove, minced
  • ¼ cup red wine vinegar
  • ¼ cup tomato purée
  • 1 tsp prepared horseradish
  • ½ tsp tamari
  • ½ tsp mustard powder
  • ½ tsp paprika

Instructions

  • 1. Combine the tofu and dates in a blender and process until smooth and creamy.
  • 2. Add the remaining ingredients and puree to mix well.

Cooking Tips

  • 1. Any white beans will work in this recipe—Great Northern, cannellini, or navy—so use whatever you have on hand.
  • 2. Whether you use the silken tofu or white beans, it is important to puree the mixture well to get a smooth and creamy texture.
