Ingredients

  • 1 small butternut squash (about 4 cups diced)
  • ½ to 1 cup water
  • 2 tsp reduced-sodium soy sauce
  • 1 Tbsp maple syrup

Instructions

  • 1. Peel the squash, then cut it in half and remove the seeds. Cut the squash into 1-inch cubes (you should have about 4 cups).
  • 2. Place into a pot with the water, soy sauce, and maple syrup. Cover and simmer over medium heat until the squash is fork tender, about 15 minutes.
