Kale and Sweet Potato Balsamic Toss
What You'll Need
1 bunch kale, stemmed and chopped
2 sweet potatoes, peeled and cubed
1 onion, chopped
1 Tbsp Dijon mustard
2 Tbsp balsamic vinegar
1 Tbsp low-sodium soy sauce
12 Tbsp water from cooking kale and sweet potato
How to Make It
1 Steam kale leaves separately, remove from steamer, and then steam sweet potato and onion together (over water if you have a steamer or in a little water, if not) until sweet potatoes are just soft.
2 Combine mustard, vinegar, soy sauce and water in a blender or by shaking them in a small lidded container.
3 Pour sauce on vegetables. Toss and serve.
