Green and Orange Balsamic Toss


  • 1 bunch kale, stemmed and chopped
  • 2 sweet potatoes, peeled and cubed
  • 1 onion, chopped
  • 1 Tbsp Dijon mustard
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp low-sodium soy sauce
  • 12 Tbsp water from cooking kale and sweet potato


  • 1. Steam kale leaves separately, remove from steamer, and then steam sweet potato and onion together (over water if you have a steamer or in a little water, if not) until sweet potatoes are just soft.
  • 2. Combine mustard, vinegar, soy sauce and water in a blender or by shaking them in a small lidded container.
  • 3. Pour sauce on vegetables. Toss and serve.
