Ingredients

  • 1 medium beet, grated
  • 1 medium carrot, grated
  • 1 medium apple, grated
  • 2 shallots (or 1 small onion), finely diced
  • 3 Tbsp white balsamic vinegar
  • ½ tsp herb salt (optional)
  • ¾ tsp mild curry powder
  • 1 tsp whole black cumin
  • A pinch of white pepper

Instructions

  • 1. In a bowl combine beet, carrot, apple, shallots, vinegar, herb salt, curry, black cumin and white pepper.
  • 2. Transfer to the fridge and allow to rest for at least 1 hour.
