Daily Green Salad

Nara’s guidelines for a great salad include two or more types of leafy greens mixed with fruit, seeds, nuts, and vegetables.



  1. Mix leafy vegetables in a bowl.
  2. Stir in lime juice, almonds and pumpkin seeds.
  3. Add remaining ingredients and mix well.

In 2010 Nara adopted a plant-based lifestyle immediately after a Type 2 Diabetes diagnosis. She then completed the Culinary Skills Program in Durham College Oshawa, Ontario, Canada and her Plant-Based Nutrition Certificate from the T. Colin Campbell Center for Nutrition Studies. She shares her story about reversing diabetes, through adopting healthful eating habits and whole food plant-based recipes in her book Secrets of My Vegan Kitchen. She is the current leader of DurhamVeg, a Vegetarian Association in Ontario. She is currently producing a TV show in Portuguese promoting the benefits of a wfpb diet to Brazilians.
