Ingredients

  • 1 english cucumber, seeds removed, grated on large holes of box grater
  • 1 cup non-dairy yogurt
  • 2 cloves of roasted garlic
  • Juice of half a lemon
  • 1 Tbsp chopped dill
  • Kosher salt and fresh cracked black pepper

Instructions

  • 1. In a nonreactive (glass, ceramic, or stainless steel) bowl combine first 5 ingredients by stirring well.
  • 2. Season to taste with salt and pepper.
