Brown Rice and Beans
What You'll Need
1 cup brown rice (or any other grain)
5 cups water
2 onions, diced
2 cloves garlic, minced
1 tsp garlic powder
1 cup dried beans (any kind)
1 tsp black pepper
How to Make It
1 Sauté 1 onion and 1 garlic clove with a splash of water for 2-3 minutes.
2 Add rice and sauté for a few minutes.
3 Add 2 cups water. Bring to a boil.
4 Reduce heat; cook partially covered, until rice is finished.
5 Cover Beans with water in a bowl, and soak overnight. Strain and wash soaked beans.
6 Place beans and 3 cups water in a large pot. Bring to a boil.
7 Reduce heat. Cook, partially covered until soft.
8 Sauté 1 onion and 1 clove garlic with a splash of water for 2-3 minutes.
9 Add a Tbsp of soft cooked beans to fry pan, and mash them to release starch.
10 Add black pepper and garlic powder.
11 Return mixture to beans pot.
12 Let it cook for a few minutes.
13 Serve over the brown rice.
