Ingredients

  • 1 cup brown rice (or any other grain)
  • 5 cups water
  • 2 onions, diced
  • 2 cloves garlic, minced
  • 1 tsp garlic powder
  • 1 cup dried beans (any kind)
  • 1 tsp black pepper

Instructions

  • 1. Sauté 1 onion and 1 garlic clove with a splash of water for 2-3 minutes.
  • 2. Add rice and sauté for a few minutes.
  • 3. Add 2 cups water. Bring to a boil.
  • 4. Reduce heat; cook partially covered, until rice is finished.
  • 5. Cover Beans with water in a bowl, and soak overnight. Strain and wash soaked beans.
  • 6. Place beans and 3 cups water in a large pot. Bring to a boil.
  • 7. Reduce heat. Cook, partially covered until soft.
  • 8. Sauté 1 onion and 1 clove garlic with a splash of water for 2-3 minutes.
  • 9. Add a Tbsp of soft cooked beans to fry pan, and mash them to release starch.
  • 10. Add black pepper and garlic powder.
  • 11. Return mixture to beans pot.
  • 12. Let it cook for a few minutes.
  • 13. Serve over the brown rice.
