1. Soak lentils and rice together overnight in a pot with fresh, cold water. Drain and rinse before use.
2. Chop the red pepper.
3. Add all ingredients to a pot except the fresh dill. Heat until boiling. Turn down heat and simmer for about 30 – 40 minutes until the lentils are finished.
4. Chop the fresh dill and add, stirring in gently.
