Boston Romaine Salad

The key to this delicious salad is to use two types of leafy greens along with fruit and pine nuts to compliment the other vegetables.



  1. Mix leafy vegetables in a bowl.
  2. Stir in lime juice and pine nuts.
  3. Add remaining ingredients and mix well.

In 2010 Nara adopted a plant-based lifestyle immediately after a Type 2 Diabetes diagnosis. She then completed the Culinary Skills Program in Durham College Oshawa, Ontario, Canada and her Plant-Based Nutrition Certificate from the T. Colin Campbell Center for Nutrition Studies. She shares her story about reversing diabetes, through adopting healthful eating habits and whole food plant-based recipes in her book Secrets of My Vegan Kitchen. She is the current leader of DurhamVeg, a Vegetarian Association in Ontario. She is currently producing a TV show in Portuguese promoting the benefits of a wfpb diet to Brazilians.
